This Bangers and Sweet Potato Mash recipe is what i'd call a new age twist on an otherwise classic (and not so nutritious) English staple. I whipped this dish up for lunch for me and my husband and it kept us full right through to dinner (which says a lot for us snackers).
I gotta say, the combination of True Story Foods Apple Honey Chicken Sausage and this miso sweet potato mash is out of this world and by far the star of the show. Like, if I could have just this on a plate I would be one happy camper (or should I say cook??) but ya know, being an adult means eating our 5 a day, so the accompanied veg are a nutritious but also tasty addition.
If you don't have these specific veggies on hand, some other great options to add nutrition point to this plate are:
Roasted Brussel sprouts
Steamed kale
Roasted zucchini
Sautéed mushrooms
Steamed green beans

Serves: 2
What you'll need:
1 large sweet potato
1 bunch broccolini
2 beets
1 tbsp white miso paste
1 tbsp maple syrup
Avocado oil for cooking
Salt and pepper to taste
What to do:
Roasted Beets:
Preheat oven to 395F bake. Peel beets, cut into cubes, toss with avocado oil, season with salt and pepper and lay out on a baking tray lined with parchment paper. Bake for 40 minutes, tossing half way through.
Sweet Potato Mash:
Fill a medium saucepan halfway with water and bring to a boil. Peel and cut sweet potato into cubes. Add 1 tsp pink salt to the water, boil sweet potato for 20 minutes. Drain water then place steamed sweet potato into a blender that can take hot foods. Add in maple syrup, salt and pepper to taste and miso paste. Blend till smooth and creamy.
Broccolini:
Wash, trim and cut broccolini into medium sized pieces. Heat frypan with a dash of avocado oil. Sauté broccolini for 4-5 mins until the broccolini turns a vibrant green and you have a nice char on the outside.Season with salt and pepper.
Chicken Sausage:
Preheat a frypan with a dash of avocado oil. Cook sausages whole, around 3-4mins each side. Remove from the heat and cut into bite sized pieces.
Arrange all items on a plate. Serve and enjoy x
