BEET SMOOTHIE BOWL



Nothing beats a good smoothie bowl on a hot summer afternoon (or any afternoon at that). The time hit somewhere smack bang in between lunch and dinner when i had a hankering for something cold, not too sweet but still delicious and satisfying.

First thought - Smoothie.

Next thought - Smoothie bowl!

Now I have been trying to lower my sugar intake and up my daily veggie count in any way possible so instead of using the usual strawberries for a pink smoothie bowl - i opted for some steamed beets that were left over from our lunch the day before.

Also, one of the best things about a smoothie bowl IMO is the opportunity to get creative with the yummy toppings. I had a few Square Bars in the fridge with my name on them so no it was a no brainer the Cherry Coconut flavor was was going on top. I know I'm pretty late to the game with these as Square bars aren't around in Australia and NZ but man are these yum! They are a protein bar that pretty much taste like you're eating a candy bar but with really simple ingredients (win win in my eyes) . What to do:

  • In your high powered food processor blitz your frozen bananas until they’re broken down into small pieces

  • Throw in the cooked beetroot and continue to blend on high until your mixture is smooth and creamy

  • Transfer to your fav smoothie bowl, top with a Cherry Coconut Square Bar cut into chunks

  • Sprinkle with coconut flakes

  • Devour x
