Banana Icecream is where the raw vegan desserts all started for me. I honestly could not believe that frozen bananas simply blended together created this smooth creamy consistency much the same as iceream. Life as I knew it had changed. The fact that you can eat a whole bowl of this banana goodness without the guilt or sugar crash you’d normally get from regular ice-cream is amazing!
Adding a small amount of raw cacao and some vanilla essence can turn a regular banana ice-cream into a chocolate lovers dream, I also topped with more cacao nibs and hazelnuts for a Nutella inspired dessert.
What you’ll need:
2 bananas cut into coins and frozen
2 tbsp raw cacao
1/2 tsp vanilla essence
Hazelnuts and cacao nibs for garnish
What to do:
In a food processor or vitamix simply pulse your frozen bananas until they’re broken down into smaller pieces then blend until you reach a smooth consistency
Add the cacao and vanilla essence, blend until combined
Transfer immediately to a bowl and top with roughly chopped hazelnuts and a sprinkle of cacao nibs
