These mini vanilla donuts remind me of little pillowy snowflakes. The perfect little morsels of peppermint, coconut icing with hints of vanilla in the soft, moreish base make them a perfect Christmas baking activity for the whole fam. Make a batch, keep them on the counter for when those little craving for something carby (yet healthy) hits.
I used mini donut moulds, and the bake time reflects that. So if you have a larger donut mould then be sure to adjust your bake time by roughly 5 minutes.
Also a word of warning - do not put the donuts in the fridge. Once baked they come out so soft and fluffy however if put in the fridge, they go rock hard, so best to keep these in a covered container on the counter.
Makes 12 Mini Donuts
1 cup gf flour (I use trader joes brand)
1/3 cup coconut or almond milk with 1 tsp acv
2 tbsp flax egg + 6 tbsp warm water
1/4 cup coconut oil melted
1/3 cup granulated monk fruit
2 tsp vanilla
2 tsp baking powder
Icing:
1 pack of unsweetened coconut shreds
1/2 tsp peppermint oil
What to do:
Preheat oven to 350F bake
Grease your mini donut tin with a little bit of coconut oil, set aside.
Make your flax egg by mixing your ground flax with the warm water. Stir well to ensure there are no remaining clumps, and set aside to allow the flax to ‘gelatinize.’
In a small jar combine your milk and the apple cider vinegar, stir well and set aside for a few minutes to ‘sour’
In high powered blender like a vitamix, combine your flour, coconut oil, monk fruit, vanilla and baking powder and blend until completely smooth.
Add your flax egg and soured milk and blend for 30 more seconds. (just until mixed well)
Pour mixture into a piping bag (or use a ziplock bag and cut a relatively large hole in the corner)
Pipe the donut mixture into your mini donut holes, ensuring they’re only halfway full as these donuts will rise.
Bake for 11 minutes
While they’re baking, prepare your coconut butter icing, to make your coconut butter place all your coconut (minus 3 tbsp) in a high powered blender like a vitamix.
On a low speed just let it run for 1 -2 minutes. During this process, the coconut will slowly turn into a butter. You want the butter to be as smooth as possible so the longer you blend the smoother it will be.
Once smooth, transfer the coconut butter into a bowl big enough to dip your donuts into.
Once the donuts are baked, wait till they cool and gently transfer to a cooling rack.
Once cool dip them in your coconut butter and sprinkle with a little bit of coconut immediately after.
Place on a rack and allow the coconut butter to set before devouring.
