Creamy Roast Chicken Salad

Ladies and Gentleman, I present to you, the Chicken Salad of your dreams. One that is full bodied, creamy, but not too heavy, undertones of citrus and will leave you and your belly completely satisfied. Oh and did I mention it's completely Soy, Nut and Dairy Free?? Yup! But you wouldn't guess by looking at (and tasting) it!

This Chicken Salad is full of good for you ingredients so you can live out your Creamy Chicken Salad dreams without a worry in the world.

I used a pre roasted chicken breast from True Story Foods, which is Organic and contains very minimal ingredients with the yummiest hint of spice that I could never recreate. This also makes this recipe that much easier. All you gotta do here is shred the chicken into smaller pieces and you're good to go.

If you'd like to add extra crunch (and nutrients) to your bowl you can add 1 small stalk finely chopped celery or cucumber to the salad mix. Or if you're not feeling like a bowl of salad simply use the Creamy Chicken Salad mix in a loaded sandwich, eat on its own, or dip some grain free crackers in it for a fancy snack.

Serves 2 people

Total time: 15 mins

What you'll need:

  • 150g True Story Foods Roast Chicken Breast

  • 200g romaine, roughly chopped

  • 1/2 avocado

  • 1/4 cup wholegrain mustard

  • 1/4 cup natural coconut yogurt

  • 1/4 cup olive oil (or can use avocado oil)

  • Half a lime

  • Salt & Pepper

  • Micro Herbs for garnish

What to do:

  • In a small bowl combine mustard, yogurt, olive oil, lime and salt & pepper

  • Stir well, until you have a thick, creamy dressing. Set aside

  • In a medium bowl shred your True Story Roast Chicken Breast

  • Cut up your avocado into small chunks, add to the bowl with the dressing

  • If you're adding any extra veggies, add them in here

  • Stir everything together until chicken is fully coated

  • Divide your romaine into 2 salad bowls

  • Top each bowl with the chicken salad mixture

  • Top each bowl with micro herbs

  • Serve and Enjoy! x
