EASY CHOCOLATE CHIA PUDDING



Packed full of fibre, omega 3, protein and antioxidants, this Chocolate Chia Pudding ticks all the boxes for Breakfast, Dessert or anything in-between.

If you have a sweet tooth (such as myself) and trying to watch your sugar intake, then this is a great low sugar dessert option as it’s only sweetened naturally by the coconut water.



Fun facts about chia seeds

  • Chia comes from the desert plant Salvia hispanica, related to mint and grown natively in South America.

  • “Chia” is the ancient Mayan word for “strength.”

  • Their high antioxidant content mean Chia Seeds fight the production of free radicals. Free radicals can cause damage to molecules in cells and contribute to ageing and diseases like cancer.

  • Chia seeds are a great source of protein for vegetarians. Just one serving (28g) contains 4.4g protein.

  • There is no nutritional difference between the black, white, cream or grey chia seeds

  • Gram for gram, chia seeds contain more Omega 3’s than salmon.

Serves 1

What you’ll need:

  • 3 tbsp Chia Seeds

  • 1/2 cup Coconut water

  • Dash boiling water

  • 1 1/2 tbsp Raw Cacao Powder

  • 1/2 teaspoon Vanilla Essence

What to do:

  • In a bowl, mix together all your ingredients until well combined

  • Transfer to a dessert glass and leave to set for 1 hour (the longer you leave the chia seeds the more they will set in a pudding)

  • Once set, top with your choice of berries, nuts and shredded coconut.

  • Enjoy

Notes:

  • You can prepare this pudding the night and leave for set in the fridge overnight for a delicious instant breakfast.

  • Some great topping options I would recommend are strawberries, blueberries, raspberries, gojis, chopped pistachios, slivered almonds, toasted coconut or hemp seeds.
