Getting geared up for another Super Bowl this Sunday. This will be my second one here in the US. I feel the first year I wasn't quite clued in on what to expect or the vibe of this crazy sport day. Mind you, i'm not actually much of a football fan BUT any excuse to whip up some food in the kitchen and i'm there.
Last year, for the game day event I made my sweet potato brownies. This year? It's all about slipping into those comfy clothes and indulging in some comfort food - Vegan style.
My favourite bit about eating nachos is all the flavours you get in each bite, and these Nachos are no exception They're every bit indulgent as they are delicious and you won't be feeling TOO guilty or sluggish afterwards, promise.
I layer my nachos like this
1. A slightly infused flavorful corn chip as the base (I used lime and sea salt tortilla chips)
2. Melt on some Vegan cheese shreds
3. Top with your Vegan meat mix
4. Add Salsa
5. Tower on the guac
6. Finish with cilantro or chopped tomatoes, or both!
7. Oh and don't forget the fresh lime
Makes 1 big bowl
What you'll need:
2 heaped cups of tortilla chips (Siete do a great grain free version)
1/2 cup soy carne asada (Gabys Foods, sell a great one if you're local to LA . Otherwise, Beyond meat beef crumbles is a good substitute)
1/4 red onion
3/4 cup tomato salsa
1/4 cup vegan shredded cheese
1/2 avocado
1/2 roma tomato
Juice from 1/2 a lime
What to do:
Preheat oven to 350F bake
Dice onion and add to a medium saucepan with 1/2 cup salsa, and your vegan minced meat.
Saute util thoroughly cooked.
Place your tortilla chips in an oven proof serving bowl, cover with your vegan cheese and place in the oven for 5-10 minutes (until the cheese starts to melt)
Remove from the oven, and top with your carne aside mix.
Spoon over the remaining salsa.
Make the guacamole by mashing the avocado, lime juice and a little sea salt in a small separate bowl.
Spoon on top of your nachos and garnish with some diced tomato.
Serve and devour x
