TRI COLORED CAULIFLOWER MASH



If you're not too much of a fan of regular white potatoes like me or trying to lower your carb intake but still love that smooth and creamy texture of mashed potatoes then you'll love this healthy cauliflower substitute! The only ingredients required are cauliflower and ghee, however you can add a bunch of herbs and spices to add a little more flavor to your Cauliflower mash. (my suggestions are at the bottom of the page)

This recipe will also work with regular white cauliflower if that's all you have available at your local market. I have however, jazzed things up a bit and took full advantage of the amazing colored cauliflower heads available at MilkandEggs.com at the moment. The selection of colors is up to you, but if you can get your hands on some colored cauli heads then it just makes this dish that much prettier.


Makes 3 separate bowls.

Ingredients

  • 1 head of purple cauliflower

  • 1 head of green cauliflower

  • 1 head of yellow cauliflower

  • 6 tbsp Fourth & Heart Truffle Ghee

What to do

  • Prepare your cauliflower heads by removing the outer leaves and core.

  • Cut into large chunks, keeping each color separate.

  • Using a large pot of boiling water and a steam basket, start by steaming your yellow cauliflower until slightly soft.

  • Remove from the basket, keeping the boiling water for the other colours and place in a vitamix or other high powered blender.

  • Blitz on high with 2 tbsp ghee for a few minutes until cauliflower is completely smooth and silky.

  • Pour into a serving bowl, rinse out your blender and continue the same steps for the green and purple cauliflower.

  • Serve a dollop of each color with your favorite veggies and protein for a bowl that lives up to the name of Eating the Rainbow.

Optional added extras:

  • Green Caulilfower - Add a handful of organic spinach to up the nutritional content

  • Yellow Cauliflower - Add 1 tbsp nutritional yeast and 1 tsp turmeric for a more intense vegan cheesy flavor

  • Purple - Add 1 tbsp white miso paste to deepen the flavor
