UBE BITES



Use Bites

In case any of you are wondering what the eff Ube is, let me tell you! Pronounced "oo-beh" its another name for purple yams. Yup, purple! This brightly coloured root vegetable has become a new obsession of mine, I mean you can't really go past the fact that this yam can turn any regular old dessert into a brightly colored nutrient dense one. With Instagram, slowly filling up with pics of this vibrant vegetable used in so many creative ways and I just had to give it a go for myself.

I had a recipe way back for "Raw Cookie Dough balls" these bite sized morsels called for nut butter as a base mixed with a few yummy things and coated in chocolate. So with a few alterations and substitutions I give you

Plant Based Ube Bites.

How do they taste?

Slightly sweet from the coconut sugar

Soft and creamy from the Ube

Crunchy from the cacao nibs

All with a slight undertone of coconut.

Makes 16 balls

What you'll need:

What to do:

  • In a food processor blitz your ube until you've reached a smooth consistency.

  • While your processor is running slowly add in your coconut butter and sugar syrup

  • Mixture should now be thick and smooth

  • Fold in your cacao nibs

  • Spoon out the mixture with a cookie scoop of tablespoon and roll into small even sized balls.

  • Lay onto a tray lined with parchment paper and place in the freezer for 20 minutes

  • In a double boiler melt down your chocolate bar with 1 tbsp coconut oil (this helps make the chocolate more manageable and "dippable")

  • Let the chocolate cool just slightly so it's not boiling hot when dipping

  • Remove your chilled balls from the freezer and with a fork scoop them up one by one and drop into the melted chocolate, coat the balls completely and carefully place back onto the parchment paper. Using a fork helps excess chocolate drip off so you get an even coating.

  • Once all of your balls are coated place back in the freezer for 10 minutes to allow chocolate to harden.

  • Remove from the freezer and enjoy!

  • Balls can be kept in an airtight container and kept in the fridge for when the time calls for a quick treat.
