Hands up if you like your pancakes fluffy full of collagen and free from grains and sugar. These 5 ingredient pancakes turned out crazy good, you wouldn't guess they're Keto friendly!
The recipe here, serves 1 so just double it I you're cooking for 2.
Makes 3 pancakes
What you'll need:
2 scoops Neu Day Collagen powder
2 eggs
4 tsp Coconut Flour
1 tsp baking powder
1 tbsp unsweetened almond milk
What to do:
Whisk all ingredients together in a medium bowl
Cook on a medium heat in a fry pan lightly greased with coconut oil
Spoon out 1/3 of the mixture at a time into medium sized pancakes
Wait 2-3 minutes before flipping and cooking for a further 2-3 minutes
Stack em up and top with Vanilla bean ghee (I use this brand), frozen raspberries & almond butter
