Zucchini fritters are an all time fav brunch option for me and a very popular one back in Melbourne (my old stomping ground). If I ever saw Zucchini Fritters on the cafe menu you'd best know Id be ordering them. So, in honor of of one my my fav cities who do Brunch the absolute best, I give you these Healthy, Peanut Head approved Zucchini Fritters made with just 3 main ingredients.
These bad boys are 8g net carbs for 4 fritters which make them Keto friendly. I used turmeric to add a little anti-inflammatory action, but feel free to sub for your favorite herb/spice.
Some great options are:
Fresh dill
Cilantro
Curry powder
Cumin
Paprika
Saffron
Makes 4 largish fritters
What you'll need:
2 cups grated zucchini
3 eggs
2 tbsp coconut flour
1/2 tsp turmeric
Cracked black pepper
Toppings: 1/2 avocado, 1 piece turkey bacon, micro greens
What to do:
Place your grated zucchini between some paper towels and squeeze as much water out of them as you can, set aside.
In a medium bowl whisk together your eggs, coconut flour and spices.
Stir in your grated zucchini
In a warmed skillet greased with ghee or coconut oil, spoon out the zucchini mixture into medium sized circles
Cook for 3-4 minutes before flipping over cooking for a further 3-4 minutes.
Stack em up and top with turkey bacon, half an avocado and a sprinkle of micro herbs. Or if you're feeling it, top with a soft poached egg.
