To all my Grain Free, Paleo and Keto peeps out there who feel like they're missing out on a classic bowl of oatmeal for breakfast. I have a deliciously easy recipe for you!
Cauliflower Rice Oatmeal.
This dish is warming, full of fibre yet still very low on net carbs (if you minus the banana on top). Ready in a few minutes and the base only really needs 3 main ingredients.
The addition of chia seeds help bind this porridge and will keep you fuller longer. As on ode to Fall now upon us ive spiked this dish with warming spices like cinnamon, ginger and nutmeg, then made it extra creamy with the addition of almond butter. But feel free to play around depending on your cravings.

Vanilla & Cacao Powder
Blueberries & Cardamom
Protein Powder
Egg white (for added protein)
Coconut Butter
Pumpkin Spice

Makes 1 bowl
What you'll need:
Base
1 cup Riced cauliflower
2 tbsp chia seeds
3/4 cup almond milk
Add ins
1 tsp nutmeg
1 tsp cinnamon
1/2 tsp ground ginger
1 tsp vanilla essence
1 generous tbsp almond butter
Toppings
Pecans
Almond Yogurt
Banana
What to do:
In a small saucepan combine your riced cauliflower, chia seeds, almond milk & spices.
Stir over a medium heat until chia seeds start to become gelatin like and the porridge becomes thick (around 4-6 minutes)
Remove from the heat and stir in your almond butter & vanilla - theres no real reason I do this after so if you'd prefer you can add these in during the cooking process.
Transfer to your favorite breakfast bowl and top with pecans, yogurt & banana
