This has got to be one of the easiest and most satisfying breakfast options that can be made ahead of time so you're ready to grab and go in the morning . Chia seeds, once soaked, expand in size and become somewhat gluey in texture. So just a few tablespoons over approximately 4 hours will soak up a lot of liquid and turn into a filling Chia pudding. see little seeds are packed with fibre, Omega 3 fatty acids, antioxidants, iron AND calcium so you know you're getting a nutritious start to the day.
With just a few ingredients needed for the base you can get creative with what you layer on top, things like fresh fruit, coconut yogurt, granola and coconut shreds are great options. I've also included a few options here for you guys in terms of the base layers, as I know some of these powders aren't the most readily available items in the supermarket. I have however, linked up the actual powders I used to achieve the colorful hues you see pictured.
What you'll need:
Makes 2 layered mason jar chia puddings
6 tbsp chia seeds
2 tbsp + 1/2 tsp pink juice (either 1 tbsp Pitaya Powder mixed with 3 tbsp almond milk OR boil 1/4 beetroot in 1/4 c water for a few mins, remove beetroot and use juice)
2 tbsp + 1/2 tsp Blue Liquid (either 1 tbsp Blue Matcha powder mixed with 3 tbsp almond milk OR boil 2 tbsp blueberries in 1/4 c water for a few mins, drain blueberries and use juice)
1/2 tsp vanilla essence
1 1/2 cups light coconut milk
4 tbsp + 2 tsp unsweetened coconut shreds
What to do:
In 3 small glass bowls mix 1/2 cup coconut milk with 2 tbsp chia seeds each, stir until combined
Add 2 tbsp blue juice into one bowl, stir til combined
Add 2 tbsp red juice into the second bowl, stir til combined
Add vanilla into third bowl stir til combined.
Place bowls in the fridge overnight or for atleast 4 hrs, chia will be set when it's firm to the touch.
Using 2 small mason jars layer the red mixture into the bottom, ensuring you use an even 1/2 of the mixture in each jar
Layer 1/2 of vanilla mix into each of the jars leaving the other half for the top
Layer on the blue, ensuring its even again.
Layer on the last of the vanilla mixture
Top each jar with 2 tbsp coconut shreds
In 2 separate bowls mix 1 tsp coconut with 1/2 tsp of each of the colored juices until coconut is fully coated.
Sprinkle blue & red coconut ontop of each of the jars.
