LOW SUGAR SMOOTHIE BOWL



Smoothie bowls are one of my fav go to breakfast options, especially in the Summer months. In my opinion there are 2 main elements that make a smoothie bowl great.

Element 1; is the base. It needs to be smooth, thick, creamy and cooling. You need just the right amount of liquid to ingredient ratio so it's thick enough to hold it's own in your breakfast bowl and allows for all those toppings to sit beautifully on top. The fail safe ingredient for the base is usually frozen bananas, and although they are healthy in their own right, too many (especially for breakfast) can add up in the sugar department. So if you're trying to watch your carb/sugar intake then go for this recipe as I use minimal bananas and more frozen veg like cauliflower & butternut squash (may sound weird but trust me on this)

Element 2; the toppings (duh!) This element is just as important as the base as the right combination of textures and flavors help dress up what would otherwise be just a thick smoothie. I tend to keep my toppings in the more low sugar, high fat zone. This helps keep me full and fueled for the morning. My musts for smoothie bowl toppings are hemp seeds for protein, nut butters (almond or cashew), something crunchy like I Heart Keenwah Bites, or a grain free granola (Kessons Kitchen or Pulp Pantry are my fav right now)

Serves 2

What you'll need:

Base

  • 3/4 c lightly steamed then frozen cauliflower

  • 3/4 c steamed then frozen butternut squash

  • 1/2 c almond milk

  • 1 frozen banana

  • 1/2 c frozen blueberries

  • 1 tbsp almond butter

Toppings

What to do:

  • In a high powered blender like a blendtec or Vitamix, blitz all your base ingredients until completely smooth. (This will take a bit of time. If you're using a Vitamix use the tamper to push the ingredients down and around to ensure a smooth and creamy base, it will look icy at first, but as you blend more, the mixture will start to turn smooth creamy}

  • Transfer base to 2 small bowls

  • Top with your desired toppings

  • Enjoy immediately
