This Matcha yogurt parfait has all the superfood goods. Such a quick and easy dairy free recipe that can be made ahead of time and kept in the fridge ready to be topped with extra goodies and devoured for breakfast, dessert, as a snack or on the go.
All the superfoods in the ingredients below are from a brand called Navitas Organics. They have a huge variety of powders, nuts and seeds and i've ben using alot of their products since I started this food blogging journey of mine way back when. Serves 2
What you’ll need:
For the yogurt
1 cup unsweetened cashew or coconut yogurt
1 tbsp Navitas Organics Matcha powder
2 tbsp Navitas Organics chia seeds
For the topping
2 tbsp unsweetened coconut shreds
2 tsp Navitas Organics Acai powder
2 tbsp Navitas Organics hemp seeds
8 organic raspberries
1/4 c grain free granola ( I used Kesson’s Kitchen Maple Pecan)
What to do:
In a medium bowl mix your chia seeds and yogurt together, sift in your matcha powder and whisk until the powder has completely mixed in.
Place in the fridge for 30 minutes to allow the chia to do its thing.
While you wait, in a separate smaller bowl mix the coconut shreds with the Acai powder until the coconut is fully coated and you have a nice purple colored coconut.
Once 30 minutes is up, grab your matcha yogurt and evenly spoon into 2 serving glasses.
Evenly top with raspberries, hemp seeds, granola and then your coconut shreds.
Serve and enjoy!
