SO the title of this recipe may sound like something that belongs in a Dr. Seuss book but I can assure you its the same concept as a green smoothie only a little more on the filling side, and so much more interesting!
The bottom layer is essentially overnight oats soaked in super greens which is then topped with a berry nice cream and some superfood boosters on top for good measure. If you’re anything like me no matter what time I get up in the morning I always seem to be rushing! The great thing about these oats is you can prepare them the night before so no need to fuss about in the morning, you have a nutritious jar of goodness at your fingertips, ready to grab and run out the door.
I topped mine with a simple berry nice cream which i have included in the method. If you don't have a food processor or would prefer something more simple. Skip out these steps and just top with fresh fruit, coconut yogurt, granola or all of the above!
What you’ll need:
1/2 cup oats (or you can use quinoa flakes as a gluten free option)
1 heaped spoon of your fav supergreens powder
1 tbsp chia seeds
1/4 cup water
1/4 cup rice or nut milk (leave a dash for the berry nicecream)
1 tbsp peanut butter (this may seem like a weird addition but the peanut butter flavour covers up the strong supergreen earthy taste. Plus, peanut butter is never a bad idea, it literally goes with anything.)
For the topping:
1/4 cup frozen raspberries
1 frozen banana
Goji berries and hemp seeds for the topping (or any other superfood goodness you’d like to add)
What to do:
In your jar mix together the oats, water, chia seeds, almond milk, supergreens and peanut butter until well combined. Please note the more you mix the thicker it will become.
You should have a reasonably thick consistency but it should still be quite “sloppy”.
Place in the fridge and leave to set – when you leave this overnight the oats and chia seeds combined will soak up the remaining liquid.
The next morning, In a food processor pulse your frozen bananas until smooth.
Add your raspberries and a small amount of your milk at a time just until a smooth creamy consistency is achieved, still keeping it as thick as possible.
Grab your mason jar full of the plump green oats out of the fridge and spoon the berry nice cream on top
Sprinkle with goji berries and 1 tsp of hemp seeds and you’re good to go.
