Whoever said Pancakes had to Sweet and only on Sundays, clearly never tried my Savoury Sweet Potato Pancakes!
This pancake recipe has been a loooong time coming. I kind of created this recipe by accident a while back. My usual go to when I have a pancake craving is my classic yet simple Banana Pancake recipe. However, for some god awful reason I didn't have any bananas on hand. BUT what I did have was some sweet potatoes. Using the same method but subbing the banana for these sweet sweet potatoes I ended up with what i can only describe to you as a smooth, warm, spiced stack of heaven. Pair these wth a generous slather of guac, caramelized onions and cherry tomatoes and you've got yourself a great Sunday staple for you and the fam.
Makes 8
What you'll need:
1 medium sweet potato (steamed)
3 pasture raised eggs (chia egg should also work for the vegans)
1/2 tsp paprika
1/2 tsp turmeric
Pinch pink salt
2 tsp of fresh rosemary
1/4 c almond flour (i use Bob Red Mills)
Guacamole, Cherry Tomatoes. Caramelized Onions and Black Sesame seeds for topping
What to do:
In a food processor blitz your steamed sweet potato till smooth
Add in the rest of your ingredients and process on high for 30 seconds (Mixture should be smooth and creamy)
In a hot pan lightly grease with coconut oil and spoon out the mixture in heaping tablespoons.
Cook on each side for 3-4 minutes, they're not going to bubble like usual pancakes so be careful they don't overcook.
As you finish each pancake stack them on a plate and cover with a paper towel to keep them as warm as possible
Once all you batter is done, stack em high and top with your favs - mine are home made guacamole, cherry tomatoes, caramelized onions and a sprinkle of sesame seeds.
